A traditional Turkish flatbread stuffed with a savory filling of sautéed spinach, creamy feta, and herbs, cooked until golden and crisp—perfect for breakfast, brunch, or a light meal.

- 3 cups all-purpose flour
- 1 tsp salt
- 1 tbsp olive oil
- 1 cup warm water (as needed to form a soft dough)
- 2 cups fresh spinach, finely chopped
- 1/2 cup crumbled feta cheese
- 1 small onion, finely chopped
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, mix flour and salt. Add olive oil and gradually pour in warm water while kneading until a soft, smooth dough forms. Cover the dough and let it rest for 30 minutes.
- Heat 1 tbsp olive oil in a pan over medium heat. Sauté the chopped onion until soft and translucent.
- Add the chopped spinach and cook until wilted. Season with salt and pepper, then let cool slightly.
- Stir in the crumbled feta cheese to the cooled spinach mixture.
- Divide the rested dough into 6 equal balls. Roll each ball into a thin rectangle on a floured surface.
- Place a portion of the spinach-feta filling on one half of each dough rectangle. Fold the dough over the filling and press the edges to seal.
- Heat a non-stick skillet or griddle over medium heat. Cook each gözleme for 2–3 minutes on each side until golden brown and crispy.
- Slice and serve warm, optionally with a dollop of yogurt or a squeeze of lemon.
Notes
- Use thawed frozen spinach as a substitute for fresh, but squeeze out excess water.
- Add chopped dill or mint for extra flavor.
- These can be frozen before cooking for a quick meal later—just cook from frozen, adding a few extra minutes.
