Description

Crispy, golden puff pastry shells filled with a rich, creamy mushroom and chicken mixture — an elegant French appetizer or main that’s flaky, savory, and irresistibly comforting.


Ingredients

  • 1 sheet puff pastry, thawed
  • 1 egg yolk (for egg wash)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 cup mushrooms, sliced (cremini or button)
  • 1 cup cooked chicken breast, diced or shredded
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk (or half-and-half)
  • 1/4 cup chicken broth
  • Salt and black pepper, to taste
  • Pinch of nutmeg (optional)
  • 1 tablespoon chopped parsley (plus more for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Cut 6 rounds from the puff pastry using a 3-inch cutter. Cut smaller holes in half of the rounds to make rings.
  2. Place the full rounds on a parchment-lined baking sheet. Brush edges with egg yolk. Place a ring on top of each and brush tops again with egg wash. Prick the center with a fork.
  3. Bake for 12–15 minutes or until puffed and golden. Set aside to cool, then gently press the centers down to make space for the filling.
  4. In a skillet, heat butter and oil over medium heat. Sauté onions and garlic for 2–3 minutes until fragrant and softened.
  5. Add mushrooms and cook until browned and tender, about 5 minutes. Stir in chicken and sprinkle flour over the mixture.
  6. Gradually add milk and broth while stirring constantly. Let simmer until thickened, about 5 minutes.
  7. Season with salt, pepper, and nutmeg. Stir in chopped parsley.
  8. Spoon the creamy filling into each pastry shell and garnish with extra parsley.
  9. Serve warm as an appetizer or light main with a crisp green salad.

Notes

  • Use rotisserie chicken for quicker prep.
  • Customize the filling with spinach, leeks, or peas for variation.
  • Puff pastry shells can be baked ahead and stored in an airtight container.
  • For a vegetarian version, omit the chicken and add more mushrooms or sautéed vegetables.
