Instructions

  1. Cook sausage: Slice the sausage and cook it in a skillet with 1 tablespoon of olive oil over medium heat until browned and fully cooked. Remove and set aside to retain the flavors in the skillet.
  2. Sauté onion: In the same skillet, add the remaining tablespoon of olive oil and sauté the chopped yellow onion until it becomes translucent, about 3-4 minutes, to develop sweetness and aroma.
  3. Cook peppers: Add the sliced red and yellow bell peppers to the skillet and cook for approximately 5 minutes until they soften, contributing bright color and flavor.
  4. Add garlic: Stir in the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
  5. Simmer sauce: Pour in the crushed tomatoes, season with salt and black pepper to taste, and let the mixture simmer gently for 10-15 minutes to meld the flavors and thicken the sauce.
  6. Cook pasta: Meanwhile, cook the penne pasta in boiling salted water according to package instructions until al dente. Reserve 1/4 cup of the pasta cooking water before draining.
