Description

This Mediterranean-inspired savory loaf is loaded with briny green olives, salty ham, and creamy feta, all wrapped in a moist, golden quick bread. Perfect warm or at room temp, it’s ideal for brunch, picnics, or a flavorful snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 eggs
  • 1/3 cup olive oil
  • 1/3 cup milk
  • 1/2 cup plain yogurt
  • 1/2 cup cooked ham, diced
  • 1/2 cup green olives, sliced
  • 3/4 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or grease it lightly.
  2. In a bowl, whisk together flour, baking powder, salt, and pepper.
  3. In another large bowl, whisk eggs, olive oil, milk, and yogurt until smooth.
  4. Gradually mix the dry ingredients into the wet until just combined.
  5. Fold in diced ham, olives, feta, and parsley.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or chilled.

Notes

  • Use kalamata olives or black olives for a different flavor profile.
  • This loaf can be made a day ahead; flavors deepen over time.
  • Store in the fridge for up to 3 days or freeze slices individually.
