This classic Rhubarb Crumble combines tart rhubarb with a sweet, crunchy oat topping for a comforting dessert that’s perfect for any occasion.

Filling
- 2 pounds rhubarb (sliced into 1-inch pieces)
- ½ cup sugar
- ¼ cup flour
- 1 teaspoon vanilla extract
Crumb Topping
- 1 cup flour
- ½ cup oats (see Notes)
- ¾ cup brown sugar
- 6 tablespoons butter (melted)
Instructions
- Preheat oven: Preheat oven to 375° Fahrenheit.
- Prepare filling: Mix together all filling ingredients in a large bowl, then transfer to a 9×13-inch baking dish.
- Make topping: Mix together all crumb topping ingredients in a bowl and crumble mixture over top of the filling.
- Bake: Bake for 40-45 minutes or until golden brown.
Notes
- Use oats in the crumb topping for added texture and flavor.
