Description

This classic Rhubarb Crumble combines tart rhubarb with a sweet, crunchy oat topping for a comforting dessert that’s perfect for any occasion.


Ingredients

Filling

  • 2 pounds rhubarb (sliced into 1-inch pieces)
  • ½ cup sugar
  • ¼ cup flour
  • 1 teaspoon vanilla extract

Crumb Topping

  • 1 cup flour
  • ½ cup oats (see Notes)
  • ¾ cup brown sugar
  • 6 tablespoons butter (melted)

Instructions

  1. Preheat oven: Preheat oven to 375° Fahrenheit.
  2. Prepare filling: Mix together all filling ingredients in a large bowl, then transfer to a 9×13-inch baking dish.
  3. Make topping: Mix together all crumb topping ingredients in a bowl and crumble mixture over top of the filling.
  4. Bake: Bake for 40-45 minutes or until golden brown.
