Description

Golden, crispy French toast sticks stacked and filled with luscious pistachio cream, then drizzled generously for a nutty, indulgent breakfast or dessert treat.


Ingredients

  • 6 thick slices of brioche or milk bread
  • 2 eggs
  • 1/2 cup whole milk
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract
  • Butter for pan-frying
  • 1/4 cup granulated sugar (for coating)
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup shelled pistachios
  • 2 tablespoons honey or maple syrup
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract (for pistachio cream)
  • Pinch of salt

Instructions

  1. Trim the crusts off the brioche slices and cut into thick sticks or cubes.
  2. In a bowl, whisk together eggs, milk, sugar, and vanilla extract.
  3. Dip each bread stick into the egg mixture to coat thoroughly.
  4. Heat a nonstick pan over medium heat and melt a bit of butter.
  5. Fry the coated bread sticks until golden brown on all sides.
  6. While still warm, toss the sticks in granulated sugar mixed with cinnamon (if using).
  7. To make the pistachio cream, blend shelled pistachios, honey, milk, vanilla extract, and salt until smooth and creamy. Add more milk as needed to adjust the consistency.
  8. Use a piping bag to fill the center of each toast stick with the pistachio cream, or drizzle it generously over the top of the stacked toast.
  9. Serve warm and enjoy!

Notes

  • Use day-old brioche or milk bread for better structure and absorption.
  • The pistachio cream can be made ahead and stored in the fridge for up to 3 days.
  • Adjust sweetness by using more or less honey in the pistachio cream.
