- 1 cup all-purpose flour
- 2 large eggs
- 1 1/4 cups milk
- 2 tablespoons melted butter
- 1 tablespoon granulated sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Butter or oil, for cooking
- 2 ripe peaches, thinly sliced
- 1 tablespoon powdered sugar, plus more for dusting
- 1 cup whipped cream (sweetened to taste)
Instructions
- In a blender or mixing bowl, combine flour, eggs, milk, melted butter, sugar, vanilla, and salt. Blend or whisk until smooth. Chill the batter for 30 minutes.
- Heat a lightly greased nonstick skillet over medium heat. Pour ¼ cup of batter into the pan, swirling to coat the bottom evenly.
- Cook for 1–2 minutes until the bottom is lightly golden, then flip and cook for another 30 seconds.
- Transfer cooked crepes to a plate and repeat with remaining batter.
- Place peach slices over one half of each crepe and fold or roll as desired.
- Dust with powdered sugar and serve with a generous spoonful of whipped cream on the side.

- Chilling the batter helps create tender crepes with fewer bubbles.
- Use ripe, juicy peaches for the best flavor and texture.
