Description

Delicate, lightly sweetened vanilla crepes filled with fresh peach slices, dusted with powdered sugar, and served with a dollop of whipped cream for a bright and elegant treat.


Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 2 tablespoons melted butter
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil, for cooking
  • 2 ripe peaches, thinly sliced
  • 1 tablespoon powdered sugar, plus more for dusting
  • 1 cup whipped cream (sweetened to taste)

Instructions

  1. In a blender or mixing bowl, combine flour, eggs, milk, melted butter, sugar, vanilla, and salt. Blend or whisk until smooth. Chill the batter for 30 minutes.
  2. Heat a lightly greased nonstick skillet over medium heat. Pour ¼ cup of batter into the pan, swirling to coat the bottom evenly.
  3. Cook for 1–2 minutes until the bottom is lightly golden, then flip and cook for another 30 seconds.
  4. Transfer cooked crepes to a plate and repeat with remaining batter.
  5. Place peach slices over one half of each crepe and fold or roll as desired.
  6. Dust with powdered sugar and serve with a generous spoonful of whipped cream on the side.

Notes

  • Chilling the batter helps create tender crepes with fewer bubbles.
  • Use ripe, juicy peaches for the best flavor and texture.
  • Crepes can be made ahead and reheated gently before filling.
