  • 2 teaspoons minced fresh garlic
  • 1 teaspoon minced fresh ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 2 tablespoons red curry paste
  • 1/2 cup full-fat coconut milk or cream
  • 1/2 cup water

  • 5 cups chopped bok choy
  • 20 frozen chicken and vegetable or pork and vegetable dumplings

Garnishes:

  • 3 tablespoons chopped cilantro
  • 1/4 cup thinly sliced green onion
  • 2 teaspoons toasted sesame seeds
  • Chili crunch oil (optional)

Instructions

  1. Prepare the Sauce: In a bowl, whisk together minced garlic, minced ginger, soy sauce, rice vinegar, toasted sesame oil, red curry paste, coconut milk, and water until smooth and well combined.
  2. Cook Bok Choy: Heat a large pan over medium heat, add the chopped bok choy, and sauté for several minutes until it is slightly wilted but still bright green.
  3. Add Dumplings: Arrange the frozen dumplings evenly on top of the sautéed bok choy in the pan without thawing them first.
  4. Pour Sauce: Pour the prepared red curry coconut sauce evenly over the dumplings and bok choy.
  5. Cook: Cover the pan with a lid, reduce heat to low or medium-low, and simmer for about 12-15 minutes, or until the dumplings are cooked through and the sauce is hot and slightly thickened.
  6. Serve: Remove the lid, garnish the dumplings and bok choy with chopped cilantro, sliced green onions, toasted sesame seeds, and drizzle with chili crunch oil if using. Serve immediately.

  • Use full-fat coconut milk or cream for a richer sauce; light coconut milk also works but results in a lighter texture.
