  • 1 cup butter, (room temperature)
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups uncooked oats
  • 1 1/2 cup chocolate chips
  • 1 cup pecans, (chopped)

Instructions

  1. Preheat Oven: Preheat oven to 350°
  2. Mix Sugars and Butter: In a large bowl, beat butter, brown sugar and sugar together until light and flurry.
  3. Add Eggs and Vanilla: Add eggs and vanilla and beat until combined.
  4. Whisk Dry Ingredients: In a medium bowl, whisk flour, baking soda, cinnamon and salt together.
  5. Combine Wet and Dry: Mix dry ingredients into wet ingredients and mix well.
  6. Add Oats, Chocolate Chips and Pecans: Stir oatmeal into cookie dough. Stir and then add chocolate chips and chopped pecans. Stir to combine.
  7. Portion Cookies: Using a 1 ½ cookie scoop, drop onto an ungreased cookie sheet.
  8. Bake: Bake for 10-12 minutes or until cookies start to brown around the edges.
  9. Cool: Remove from the oven and place cookies on a wire rack to cool.
