Ingredients
Scale
Eggs and Filling
- 6 large eggs
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon sugar
- Pinch of salt
- Pinch of black pepper
Bacon and Garnishes
- 4 strips thick-cut bacon, cooked and crumbled
- Smoked paprika for garnish
- Fresh chives, chopped, for garnish (optional)
Instructions
- Boil the eggs: Place eggs in a single layer in a saucepan and cover with cold water by 1 inch. Bring the water to a rolling boil over high heat.
- Cook off-heat: Once boiling, immediately remove the pan from heat, cover it, and let the eggs stand for 10-12 minutes to finish cooking gently.
- Cool eggs: Drain the hot water and transfer eggs to an ice bath for 5 minutes to stop cooking and make peeling easier.
- Peel and halve: Carefully peel the cooled eggs and slice each in half lengthwise, separating whites and yolks.
- Prepare yolk mixture: Scoop yolks into a medium bowl and mash with a fork until smooth. Add mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and pepper and mix until creamy and well combined.
- Add bacon: Stir in most of the crumbled bacon, reserving some for topping.
- Fill egg whites: Spoon or pipe the yolk mixture back into the egg white halves evenly.
- Garnish and chill: Sprinkle the reserved bacon, smoked paprika, and optional chopped chives over the filled eggs. Chill for at least 30 minutes before serving to allow flavors to meld.
Notes
- Using thick-cut bacon adds a nice texture and smoky flavor to the filling.
- Letting the eggs rest in hot water off the heat prevents overcooking and green rings around yolks.
- Chilling the deviled eggs before serving enhances the flavor and makes them easier to slice.
- You can pipe the filling using a piping bag for a cleaner presentation.
- Make sure eggs are fully cooled before peeling to avoid tearing the whites.
