Eggs and Filling

  • 6 large eggs
  • 3 tablespoons mayonnaise

  • 4 strips thick-cut bacon, cooked and crumbled

Instructions

  1. Boil the eggs: Place eggs in a single layer in a saucepan and cover with cold water by 1 inch. Bring the water to a rolling boil over high heat.
  2. Cook off-heat: Once boiling, immediately remove the pan from heat, cover it, and let the eggs stand for 10-12 minutes to finish cooking gently.
  3. Cool eggs: Drain the hot water and transfer eggs to an ice bath for 5 minutes to stop cooking and make peeling easier.
  4. Peel and halve: Carefully peel the cooled eggs and slice each in half lengthwise, separating whites and yolks.
  5. Prepare yolk mixture: Scoop yolks into a medium bowl and mash with a fork until smooth. Add mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and pepper and mix until creamy and well combined.
  6. Add bacon: Stir in most of the crumbled bacon, reserving some for topping.
