These High Protein Egg White Bites combine fluffy egg whites with veggies and cheese for a nutritious, low-fat breakfast or snack that’s easy to prepare and perfect for meal prep.

Egg Mixture
- 2 cups liquid egg whites (or whites from about 10 large eggs)
- 1/4 cup low-fat cottage cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Vegetables and Cheese
- 1/2 cup chopped spinach
- 1/2 cup diced bell pepper
- 1/4 cup chopped red onion
- 1/4 cup shredded reduced-fat cheddar cheese
Other
- Nonstick spray or olive oil for greasing
Instructions
- Preheat the Oven
Preheat the oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with nonstick spray or oil. - Blend Egg Mixture
In a blender, combine the egg whites, cottage cheese, garlic powder, salt, and pepper. Blend until smooth and slightly frothy. - Add Vegetables and Cheese
Stir in the spinach, bell pepper, red onion, and cheddar cheese. - Fill Muffin Cups
Pour the mixture evenly into the prepared muffin cups, filling each about 3/4 full. - Bake
Bake for 18–22 minutes, or until the centers are set and the tops are slightly golden. - Cool and Serve
Remove from the oven and let cool for 5 minutes before removing from the pan. Serve warm or store in the fridge for meal prep.
Notes
- Let the egg bites cool for 5 minutes before removing them from the muffin tin to help them hold their shape.
