Description

These High Protein Egg White Bites combine fluffy egg whites with veggies and cheese for a nutritious, low-fat breakfast or snack that’s easy to prepare and perfect for meal prep.


Ingredients

Egg Mixture

  • 2 cups liquid egg whites (or whites from about 10 large eggs)
  • 1/4 cup low-fat cottage cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Vegetables and Cheese

  • 1/2 cup chopped spinach
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped red onion
  • 1/4 cup shredded reduced-fat cheddar cheese

Other

  • Nonstick spray or olive oil for greasing

Instructions

  1. Preheat the Oven
    Preheat the oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with nonstick spray or oil.
  2. Blend Egg Mixture
    In a blender, combine the egg whites, cottage cheese, garlic powder, salt, and pepper. Blend until smooth and slightly frothy.
  3. Add Vegetables and Cheese
    Stir in the spinach, bell pepper, red onion, and cheddar cheese.
  4. Fill Muffin Cups
    Pour the mixture evenly into the prepared muffin cups, filling each about 3/4 full.
  5. Bake
    Bake for 18–22 minutes, or until the centers are set and the tops are slightly golden.
  6. Cool and Serve
    Remove from the oven and let cool for 5 minutes before removing from the pan. Serve warm or store in the fridge for meal prep.

Notes

  • Let the egg bites cool for 5 minutes before removing them from the muffin tin to help them hold their shape.
