Hearty White Bean Stew Ingredients
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoon olive oil
- 2 tablespoon lemon juice
- 3 cup navy beans
- 1 cup onion
- 2 cup carrot
- 1 cup celery stalks
- 4 cup vegetable broth
- 2 cup spinach
- 1/4 cup parsley
- 4 oz garlic clove
- 14 oz diced tomatoes
- 2 oz bay leaf
Instructions
- Prepare vegetables: Dice the onion, carrots, and celery. Mince the garlic cloves.
- Heat oil: In a large pot, heat olive oil over medium heat.
- Sauté vegetables: Add diced onion, carrots, and celery to the pot. Cook for 5-7 minutes until softened.
- Add garlic and herbs: Stir in minced garlic, thyme, and rosemary. Cook for another minute until fragrant.
- Add beans and tomatoes: Add white beans and diced tomatoes to the pot. Stir to combine.
- Add broth and seasonings: Pour in vegetable broth. Add bay leaves, salt, and pepper. Bring to a boil.
