This Healthy Blueberry Lemon Cheesecake Porridge is a creamy and delicious breakfast that tastes like dessert, combining oats, Greek yoghurt, fresh lemon juice, and blueberries for a refreshing start to your day.

For the Porridge:

  • 3/4 cup oats (rolled or quick/porridge oats)
  • 1 cup milk (dairy or plant-based alternative)
  • 1 tbsp milled flaxseeds (optional)
  • 2 tbsp Greek yoghurt (or thick vegan yoghurt alternative)
  • 12 tbsp fresh lemon juice

Toppings:

  • 1/2 tsp lemon zest
  • 1/2 cup (handful) blueberries (fresh or defrosted if frozen)
  • Drizzle of your sweetener of choice (e.g. honey, maple syrup or agave nectar)

Instructions

  1. Combine and cook: In a medium saucepan, combine the oats, flaxseeds, and milk. Add the Greek yoghurt and 1 tablespoon of lemon juice, stirring until well combined. Cook over a low to medium heat, stirring frequently, until the porridge thickens and the oats are soft.
  2. Adjust lemon flavor: Taste the porridge, and if you’d like a stronger lemon flavor, stir in an additional tablespoon of lemon juice.
  3. Serve with toppings: Once the porridge reaches your desired consistency, remove the pan from the heat and transfer it to a serving bowl. Finish with a topping of lemon zest, blueberries, and a drizzle of your sweetener of choice.

Notes

  • If using frozen blueberries, defrost them overnight in the fridge or heat them briefly in the microwave before adding them to your porridge.
  • Use unwaxed organic lemons for zesting.
