Description

This Greek Chicken Souvlaki recipe features tender chicken marinated in a zesty blend of olive oil, garlic, lemon, and Greek seasoning, then grilled to perfection. Perfect for a flavorful and juicy meal that transports you straight to the Mediterranean.

Ingredients

Units Scale

Ingredients

  • 1 lb. boneless, skinless, chicken breasts or thighs ( cut into bite size pieces)
  • 2 tablespoons olive oil
  • 1 tablespoon vinegar
  • 4 large garlic cloves (minced)
  • 3 tablespoons Greek Seasoning
  • 1 large lemon (juiced)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper

Instructions

  1. Combine ingredients and marinate: Combine all ingredients in a ziplock bag and shake well to mix. Add chicken and shake to ensure the marinade is covering chicken. Allow to marinate in the refrigerator overnight, or for at least 6 hours. You can also do this in a tightly covered bowl.
  2. Grill the chicken: Remove chicken from marinade, and toss the leftover marinade. Thread chicken onto skewers and grill until cooked through on an outdoor grill, or on the stove top with a grill pan. Chicken is done once it is cooked through and reaches 165°F on an instant read meat thermometer. See notes below to cook in oven or air fryer.
  3. Rest and serve: Let chicken rest for 5 minutes wrapped in foil, then serve as desired! This step seems unimportant, but it will ensure extra juicy and tender chicken.

Notes

  • Resting the chicken for 5 minutes wrapped in foil ensures extra juicy and tender chicken.
  • You can cook the chicken in the oven or air fryer as alternatives to grilling.
