- 4 large russet potatoes, cut into fries
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup freshly grated Parmesan cheese
- 1 tablespoon fresh parsley, finely chopped
- For the Aioli:
- 1/3 cup mayonnaise
- 1 clove garlic, finely minced
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss the cut potatoes in olive oil, garlic powder, salt, and pepper. Spread evenly on the baking sheet.
- Bake for 25–30 minutes, flipping halfway, until golden and crispy.
- Meanwhile, whisk together mayonnaise, minced garlic, lemon juice, and a pinch of salt to make the aioli.
- Remove fries from the oven and while hot, toss with grated Parmesan and chopped parsley.
- Drizzle with prepared aioli or serve it on the side for dipping. Best enjoyed immediately.

- Soak potato slices in cold water for 30 minutes before baking for extra crispiness.
