These fluffy eggless pancakes are a delicious and easy breakfast option, perfect for those avoiding eggs but still craving classic, tender pancakes.

Ingredients

Units Scale

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 4 tablespoons melted butter ((or oil))

Instructions

  1. Mix dry ingredients: To a large mixing bowl, add the flour, sugar, and baking powder. Whisk together.
  2. Mix wet ingredients: In another bowl, whisk the milk, vanilla, and melted butter. The butter might not emulsify into the milk, and that’s fine.
  3. Combine batter: Pour the wet ingredients into the dry ingredients and mix until just combined – do not overmix. There should be lots of lumps in the batter.
  4. Cook pancakes: Heat a greased skillet over medium heat until hot. Add 1/4 cup of batter into the pan. Cook for 2 minutes until the edges start to dry up and bubbles form on the surface. Flip, and cook for another 1-2 minutes until cooked through.
  5. Serve: Serve with your favorite pancake toppings!
