- 4 cups broccoli florets
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 2 tbsp olive oil
- 4 cups vegetable or chicken broth
- 1 tsp dried oregano
- 1/2 tsp dried basil
- Salt and black pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup heavy cream or milk (optional, for extra creaminess)
Instructions
- Heat Olive Oil
Place a pot on medium heat. Add olive oil and let it warm for 1–2 minutes. - Sauté Onion and Garlic
Add chopped onion and minced garlic. Cook until soft and fragrant, about 3–4 minutes. - Add Broccoli
Stir in broccoli florets. Cook for 2–3 minutes until they become slightly tender. - Pour in Broth
Add vegetable or chicken broth. Bring to a gentle boil for 5–6 minutes until broccoli is soft. - Add Herbs and Seasoning
Stir in oregano, basil, salt and black pepper. Let the flavors combine for 2 minutes. - Blend the Soup
Use an immersion blender or regular blender to puree soup until smooth and creamy. - Add Cream (Optional)
For extra creaminess, stir in milk or cream. Heat for 1–2 minutes without boiling. - Serve with Parmesan
Ladle soup into bowls and sprinkle with grated Parmesan cheese before serving.
