Description

This Delicious Curry Dumpling Soup is a cozy, flavor-packed bowl of comfort. It combines creamy coconut curry broth, tender dumplings, and vibrant herbs for an irresistible fusion of Thai and comfort food. Quick to prepare and perfect for chilly days or anytime you crave something warm and spicy!


Ingredients

  • 1 tablespoon extra virgin olive oil or avocado oil

  • 1/2 onion, diced

  • 4 tablespoons Thai red curry paste

  • 3 cloves garlic, finely chopped

  • 1 tablespoon chopped ginger (or paste, ~1-inch piece)

  • 1 tablespoon chopped lemongrass or lemongrass paste (optional)

  • 3 cups chicken broth

  • 14 oz canned coconut milk

  • 2 teaspoons fish sauce

  • 2 teaspoons sugar

  • 1 pound frozen dumplings (potstickers or wontons)

  • 1 cup spinach, chopped

  • 2 green onions, sliced

  • 1 tablespoon chopped cilantro

  • Juice of 1 lime

For Garnish (Optional but Recommended):

  • Diagonally sliced green onions

  • Minced cilantro

  • Chopped Thai basil

  • Fried onions

  • Chili oil or chili crisp


Instructions

  1. Sauté Onions: Heat oil in a large soup pot over medium heat until shimmering. Add diced onion and sauté for about 5 minutes until soft and translucent.

  2. Add Aromatics: Stir in Thai red curry paste, garlic, ginger, and optional lemongrass. Cook for 1–2 minutes until fragrant.

  3. Simmer the Broth: Increase heat to medium-high. Add chicken broth and coconut milk, bringing to a gentle boil. Reduce to an active simmer.

  4. Add Dumplings & Seasonings: Stir in fish sauce and sugar. Add frozen dumplings and cook until they float and are cooked through (about 5–8 minutes).

  5. Add Greens: Stir in chopped spinach, green onions, and cilantro. Simmer briefly until greens wilt.

  6. Finish: Squeeze in lime juice. Taste and adjust seasoning if needed.

  7. Garnish & Serve: Ladle soup into bowls and top with extra herbs, fried onions, and chili oil if desired.


Notes

  • Use veggie broth and vegan dumplings for a vegetarian version (replace fish sauce with soy sauce).

  • Lemongrass adds brightness but is optional.
