- For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 6 tablespoons melted butter
- For the filling:
- 24 oz (680g) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 tablespoon vanilla extract
- For the streusel topping:
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 6 tablespoons cold butter, cubed
Instructions
- Preheat oven to 325°F (160°C). Line the bottom of a springform pan with parchment paper.
- Mix graham cracker crumbs, brown sugar, cinnamon, and melted butter in a bowl. Press into the bottom and sides of the pan. Bake for 10 minutes and let cool.
- In a large bowl, beat cream cheese until smooth. Add sugar and beat until creamy. Add eggs one at a time, mixing just until combined. Stir in sour cream and vanilla.
- Pour the cheesecake filling into the crust.
- In another bowl, combine flour, brown sugar, cinnamon, and nutmeg. Cut in butter with a fork until crumbly. Sprinkle the streusel evenly over the top.
- Bake for 55–65 minutes or until center is just set.
- Cool completely, then refrigerate for at least 4 hours or overnight.
- Slice and serve chilled or at room temperature.

- Ensure cream cheese is softened for a smooth filling.
- Use a water bath for even baking and to prevent cracking.
- Streusel can be made in advance and stored chilled until ready to use.
