Description

A decadent New York-style cheesecake layered with a buttery graham crust and crowned with a thick, crunchy cinnamon streusel—perfectly spiced and irresistibly creamy.

  • For the crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 6 tablespoons melted butter
  • For the filling:
  • 24 oz (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tablespoon vanilla extract
  • For the streusel topping:
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 6 tablespoons cold butter, cubed

Instructions

  1. Preheat oven to 325°F (160°C). Line the bottom of a springform pan with parchment paper.
  2. Mix graham cracker crumbs, brown sugar, cinnamon, and melted butter in a bowl. Press into the bottom and sides of the pan. Bake for 10 minutes and let cool.
  3. In a large bowl, beat cream cheese until smooth. Add sugar and beat until creamy. Add eggs one at a time, mixing just until combined. Stir in sour cream and vanilla.
  4. Pour the cheesecake filling into the crust.
  5. In another bowl, combine flour, brown sugar, cinnamon, and nutmeg. Cut in butter with a fork until crumbly. Sprinkle the streusel evenly over the top.
  6. Bake for 55–65 minutes or until center is just set.
  7. Cool completely, then refrigerate for at least 4 hours or overnight.
  8. Slice and serve chilled or at room temperature.

Notes

  • Ensure cream cheese is softened for a smooth filling.
  • Use a water bath for even baking and to prevent cracking.
  • Streusel can be made in advance and stored chilled until ready to use.
