- 3 cups all-purpose flour
- 2 1/4 tsp active dry yeast (1 packet)
- 1 tbsp sugar
- 1 tsp salt
- 3/4 cup warm milk
- 1/4 cup warm water
- 2 tbsp unsalted butter, melted
- 1 egg
- For the filling:
- 1 cup cooked chicken, shredded
- 1/2 cup cheddar cheese, shredded
- 1/4 cup onion, finely chopped
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1/2 tsp paprika
- Salt and pepper to taste
- For topping:
- 1 egg yolk + 1 tbsp water (egg wash)
- 1 tbsp poppy seeds
Instructions
- In a bowl, combine warm milk, water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
- Add flour, salt, egg, and melted butter. Mix and knead for about 8–10 minutes until smooth. Cover and let rise for 1 hour until doubled.
- Meanwhile, heat olive oil in a skillet, sauté onion and garlic for 2 minutes. Add shredded chicken, paprika, salt, and pepper. Stir in cheddar cheese and let cool.
- Punch down dough and divide into equal portions (8–10 balls). Flatten each ball and fill with 1–2 tbsp of the chicken-cheese mixture. Seal and shape into buns.
- Place on a lined baking tray. Cover and let rise for 30 minutes.
- Preheat oven to 375°F (190°C). Brush buns with egg wash and sprinkle with poppy seeds.
- Bake for 18–20 minutes or until golden brown. Cool slightly before serving.

- Use leftover roast chicken or rotisserie chicken for quick prep.
- Try adding chopped herbs or spices to the filling for extra flavor.
- These buns freeze well—reheat in the oven or toaster oven before serving.
