- 2 medium sweet potatoes, peeled and cubed
- 1 cup red lentils, rinsed

- 1 teaspoon cumin
- 1 teaspoon coriander

- 2 tablespoons olive oil
- 1/4 cup fresh cilantro, chopped
Instructions
- Preparation: Boil the sweet potatoes in a pot until tender, about 10-15 minutes. Drain and mash in a large bowl.
- Preparation: Cook the red lentils in water until soft, about 15 minutes. Drain and add to the mashed sweet potatoes.
