Description

Golden, crunchy pastry rolls filled with melty cheese, herbs, and spices, then topped with toasted pine nuts and fresh parsley – a Middle Eastern-inspired appetizer perfect for sharing.


Ingredients

  • 12 spring roll wrappers or thin fatayer dough sheets
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1/2 cup ricotta cheese (or akkawi, if available)
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon dried mint
  • 1/2 teaspoon ground sumac
  • 1/4 teaspoon black pepper
  • 1/4 cup pine nuts, toasted
  • 1 egg (for sealing)
  • Vegetable oil, for frying or brushing if baking
  • Fresh parsley and extra sumac for garnish

Instructions

  1. In a mixing bowl, combine mozzarella, feta, ricotta, parsley, mint, sumac, and pepper until evenly mixed.
  2. Lay out a wrapper and place about 2 tablespoons of the cheese mixture near the edge. Roll tightly, folding in the sides as you go. Seal the edge with beaten egg.
  3. Repeat with remaining wrappers and filling.
  4. Heat oil in a pan over medium-high and fry rolls until golden and crispy, about 2–3 minutes per side.
  5. Alternatively, brush rolls with oil and bake at 400°F (200°C) for 15–20 minutes until golden.
  6. Immediately sprinkle with toasted pine nuts, fresh parsley, and a dusting of sumac.
  7. Serve hot with garlic sauce, tahini dip, or yogurt on the side.

Notes

  • You can substitute ricotta with akkawi cheese for a more authentic flavor.
  • For a healthier version, opt for baking instead of frying.
  • Serve with your choice of dip – garlic sauce, tahini, or yogurt-based dips work well.
