- 4 Garlic Cloves (minced)
- 1 1/2 lbs. Italian Sausage
- 2 28–ounce cans Whole or Crushed Tomatoes
- 1/4 cup Fresh Basil (chopped or 1 Tablespoon dried basil)
- 1/4 cup Fresh Oregano (chopped or 1 Tablespoon dried oregano)
- 1 teaspoon Red Chili Flakes
- 2 teaspoons Salt
- 1 teaspoon Pepper
- 1 1/2 cups Heavy Cream
- 1 1/2 cups Grated Parmesan Cheese
- 1 lb. Rigatoni Pasta
Instructions
- Heat olive oil: Heat olive oil in a large pot or Dutch oven over medium heat.
- Cook onion: Add diced onion and cook until translucent, about 5 minutes.
- Add garlic: Stir in minced garlic and cook for 1 minute until fragrant.
- Brown sausage: Add Italian sausage, breaking it up with a wooden spoon, and cook until browned.
- Add tomatoes: Pour in whole or crushed tomatoes; if using whole tomatoes, blend until smooth before adding.
- Add herbs and seasonings: Add chopped basil, oregano, red chili flakes, salt, and pepper; stir to combine.
- Simmer sauce: Simmer sauce for 15 minutes, stirring occasionally.
- Cook pasta: Meanwhile, cook rigatoni pasta in salted boiling water according to package instructions until al dente; drain.
- Combine cream and cheese: Reduce sauce heat to low and stir in heavy cream and grated Parmesan cheese until creamy and well combined.
- Toss pasta with sauce: Add cooked rigatoni to the sauce and toss to coat evenly.
- Serve: Serve hot, garnished with extra Parmesan or fresh herbs if desired.
