Crust

- 8 oz dark chocolate (melted, for coating)
- 2 tbsp unsalted butter (for chocolate coating)
Garnish
- Shaved chocolate (for garnish)
- 5 extra raspberries (for topping)
Instructions
- Freeze Raspberries: Place one raspberry into each dome mold cavity and freeze for 30 minutes to firm up.
- Prepare Cheesecake Filling: In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Whip Cream: In a separate bowl, whip the heavy cream until stiff peaks form and gently fold it into the cream cheese mixture.
- Fill Molds: Spoon cheesecake filling into each mold, halfway up, pressing around the frozen raspberry in the center.
- Make Ganache: Melt dark chocolate with cream for ganache, let it cool slightly, then spoon over cheesecake in molds.
- Form Crust: Mix crushed graham crackers and melted butter, then press onto the ganache layer to form the base crust.
- Freeze Domes: Freeze domes until solid (about 4 hours or overnight).
- Unmold and Coat: Unmold frozen domes and place on a wire rack. Pour melted chocolate mixed with butter over each dome to coat.
- Garnish: Immediately garnish with shaved chocolate and a raspberry on top.
- Chill Before Serving: Refrigerate until ready to serve.
