Ingredients

Units Scale

Main Ingredients

  • 5 fresh raspberries
  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream

Ganache

  • 6 oz dark chocolate (chopped, for ganache)
  • 2 tbsp heavy cream (for ganache)

Crust

  • 1/2 cup crushed graham crackers or digestive biscuits
  • 3 tbsp unsalted butter (melted, for crust)

Chocolate Coating

  • 8 oz dark chocolate (melted, for coating)
  • 2 tbsp unsalted butter (for chocolate coating)

Garnish

  • Shaved chocolate (for garnish)
  • 5 extra raspberries (for topping)

Instructions

  1. Freeze Raspberries: Place one raspberry into each dome mold cavity and freeze for 30 minutes to firm up.
  2. Prepare Cheesecake Filling: In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  3. Whip Cream: In a separate bowl, whip the heavy cream until stiff peaks form and gently fold it into the cream cheese mixture.
  4. Fill Molds: Spoon cheesecake filling into each mold, halfway up, pressing around the frozen raspberry in the center.
  5. Make Ganache: Melt dark chocolate with cream for ganache, let it cool slightly, then spoon over cheesecake in molds.
  6. Form Crust: Mix crushed graham crackers and melted butter, then press onto the ganache layer to form the base crust.
  7. Freeze Domes: Freeze domes until solid (about 4 hours or overnight).
  8. Unmold and Coat: Unmold frozen domes and place on a wire rack. Pour melted chocolate mixed with butter over each dome to coat.
  9. Garnish: Immediately garnish with shaved chocolate and a raspberry on top.
  10. Chill Before Serving: Refrigerate until ready to serve.

Notes

  • Freezing the raspberries before adding filling helps keep them firm and centered.
  • Let the ganache cool slightly before spooning to avoid melting the filling.
  • Freeze domes thoroughly for best results when unmolding.
