- 1/2 cup mascarpone cheese
- 1/3 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 cup heavy whipping cream (for filling)
- 1 cup heavy cream (for ganache)
- 8 oz dark chocolate, finely chopped
- 1/4 cup chopped pistachios
- 2 tablespoons melted white chocolate
- 2 tablespoons melted pistachio paste or green candy melts
Instructions
- Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- In a bowl, beat eggs and sugar on high speed until light and fluffy (about 5–6 minutes).
- Sift together flour, cocoa powder, baking powder, and salt. Gently fold into egg mixture until just combined.
- Pour batter into prepared pan, spread evenly, and bake for 10–12 minutes.
- While warm, roll cake in parchment from the short end into a log shape. Let cool completely.
- For filling, beat pistachio paste, mascarpone, powdered sugar, and vanilla until smooth. Whip cream to stiff peaks, then fold in.
- Unroll the cooled cake, spread with pistachio filling, and re-roll gently. Chill for 30 minutes.
- For ganache, heat cream until steaming, pour over chopped chocolate, and stir until smooth. Let cool slightly, then spread over the log.
- Drizzle with melted white chocolate and pistachio paste. Sprinkle with chopped pistachios.
- Refrigerate for 1 hour before slicing and serving.
