- 4 cups thick-cut frozen fries
- 1 tablespoon oil
- 4 garlic cloves, finely chopped
- 1/2 red onion, sliced
- 1 green bell pepper, thinly sliced
- 1 red chili, sliced
- 1 green chili, sliced
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon paprika or Kashmiri chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 1 tablespoon chopped spring onions or cilantro
Instructions
- Cook fries according to package instructions or deep fry until golden and crispy. Drain excess oil and set aside.
- In a skillet, heat 1 tablespoon oil over medium heat. Add chopped garlic and sauté until lightly golden.
- Add onions, green and red chilies, and bell peppers. Stir-fry for 2–3 minutes until slightly softened but still crisp.
- Add turmeric, paprika, garam masala, and a pinch of salt. Toss in the cooked fries and stir well to coat evenly.
- Sprinkle with fresh spring onions or cilantro and serve hot.
Notes
- Use Kashmiri chili powder for vibrant color with mild heat, or paprika for a smoky touch.
- For extra crispiness, double-fry the potatoes or bake them longer for a golden finish.
- Can be made with fresh homemade fries instead of frozen.
- Serve with ketchup, garlic mayo, or mint chutney for dipping.
