Description

Juicy pineapple slices seared to golden perfection and drizzled with rich caramel glaze, finished with a hint of fresh herbs—an irresistible balance of sweet, smoky, and fresh.

Ingredients

Scale
  • 1 fresh pineapple, peeled, cored, and sliced into rings
  • 2 tablespoons unsalted butter
  • 3 tablespoons brown sugar
  • 1/4 teaspoon cinnamon (optional)
  • Pinch of salt
  • 1 tablespoon chopped fresh mint or parsley (for garnish)
  • Optional: a splash of dark rum or vanilla extract

Instructions

  1. In a large skillet over medium heat, melt butter and stir in brown sugar, cinnamon (if using), and salt.
  2. Add pineapple rings in a single layer and cook for 2–3 minutes on each side, or until golden and caramelized.
  3. If using rum or vanilla, add a splash to the pan during the last 30 seconds and let it bubble slightly.
  4. Transfer caramelized pineapple to a serving platter and spoon any remaining sauce over the top.
  5. Garnish with freshly chopped herbs and serve warm.

Notes

  • Use ripe but firm pineapple for best results.
  • Serve with ice cream or yogurt for a complete dessert.
  • Mint adds brightness, while parsley provides a savory contrast.
