Description

Flaky, buttery puff pastry rounds filled with sweet caramelized onions and creamy goat cheese—elegant, savory bites perfect for entertaining.


Ingredients

  • 1 sheet puff pastry, thawed
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon brown sugar
  • 1/2 teaspoon salt
  • 4 oz goat cheese
  • 1 egg (for egg wash)
  • Fresh thyme leaves (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. In a large skillet, heat butter and olive oil over medium heat. Add onions and cook slowly for 25–30 minutes until deeply golden.
  3. Stir in balsamic vinegar, brown sugar, and salt. Cook 5 more minutes until syrupy, then remove from heat.
  4. Roll out the puff pastry and use a round cutter to cut out circles. Use a smaller cutter to score a border inside each round without cutting through.
  5. Spoon a teaspoon of caramelized onion in the center of each round and top with a dollop of goat cheese.
  6. Brush pastry edges with beaten egg and bake for 15–18 minutes or until puffed and golden.
  7. Garnish with fresh thyme and serve warm.

Notes

  • Make the caramelized onions ahead of time and store in the fridge for up to 3 days.
  • Substitute goat cheese with brie or feta for a different flavor profile.
  • Serve with a drizzle of honey for a sweet-savory twist.
