- 1 sheet puff pastry, thawed
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- 1 teaspoon brown sugar
- 1/2 teaspoon salt
- 4 oz goat cheese
- 1 egg (for egg wash)
- Fresh thyme leaves (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
- In a large skillet, heat butter and olive oil over medium heat. Add onions and cook slowly for 25–30 minutes until deeply golden.
- Stir in balsamic vinegar, brown sugar, and salt. Cook 5 more minutes until syrupy, then remove from heat.
- Roll out the puff pastry and use a round cutter to cut out circles. Use a smaller cutter to score a border inside each round without cutting through.
- Spoon a teaspoon of caramelized onion in the center of each round and top with a dollop of goat cheese.
- Brush pastry edges with beaten egg and bake for 15–18 minutes or until puffed and golden.
- Garnish with fresh thyme and serve warm.

- Make the caramelized onions ahead of time and store in the fridge for up to 3 days.
- Substitute goat cheese with brie or feta for a different flavor profile.
