  • 1 cup butter (*softened/unsalted)
  • 8 oz cream cheese (*softened)
  • 3/4 cup sugar
  • 2 tsp vanilla extract
  • 4 eggs
  • 2 cups flour (*all purpose)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups blueberries (*fresh, tossed in 1 tbsp flour)

Instructions

  1. Preheat and prepare pans: Preheat oven to 350 degrees and grease 2 loaf pans (9×5)
  2. Cream base: In a large bowl, cream together the butter, cream cheese, and sugar.
  3. Add liquids: Add in the vanilla extract and eggs.
  4. Add dry ingredients: Slowly add in the flour, baking powder, and salt.
  5. Fold in blueberries: Once combined, carefully fold in the fresh blueberries.
  6. Pour batter: Pour batter (it will be quite thick, that is okay) into the prepared pans evenly.
  7. Bake: Place into preheated oven and bake for about 50 minutes, or until toothpick comes out clean once inserted in center of bread.
  8. Cool and serve: Remove from oven and allow to cool slightly before removing from pan and slicing!
