- 1 cup butter (*softened/unsalted)
- 8 oz cream cheese (*softened)
- 3/4 cup sugar
- 2 tsp vanilla extract
- 4 eggs
- 2 cups flour (*all purpose)
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cups blueberries (*fresh, tossed in 1 tbsp flour)
Instructions
- Preheat and prepare pans: Preheat oven to 350 degrees and grease 2 loaf pans (9×5)
- Cream base: In a large bowl, cream together the butter, cream cheese, and sugar.
- Add liquids: Add in the vanilla extract and eggs.
- Add dry ingredients: Slowly add in the flour, baking powder, and salt.
- Fold in blueberries: Once combined, carefully fold in the fresh blueberries.
- Pour batter: Pour batter (it will be quite thick, that is okay) into the prepared pans evenly.
- Bake: Place into preheated oven and bake for about 50 minutes, or until toothpick comes out clean once inserted in center of bread.
- Cool and serve: Remove from oven and allow to cool slightly before removing from pan and slicing!
