Description

Tender chicken breasts filled with creamy spinach cheese filling, wrapped in crispy bacon and roasted to perfection—an irresistible blend of textures and rich, savory flavors.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1/2 cup cream cheese, softened
  • 1/2 cup cooked spinach, chopped and drained
  • 1/4 cup grated parmesan cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 8 slices of bacon
  • 1 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with foil.
  2. In a bowl, combine cream cheese, chopped spinach, parmesan, garlic, salt, and pepper. Mix until smooth.
  3. Butterfly the chicken breasts and place plastic wrap over them. Pound to even thickness.
  4. Spoon the spinach mixture into the center of each chicken breast and roll them up tightly.
  5. Wrap each chicken roll with bacon slices, tucking the ends underneath.
  6. Heat olive oil in a skillet and sear the wrapped chicken rolls on all sides until browned.
  7. Transfer to the baking sheet and bake for 25–30 minutes, or until internal temperature reaches 165°F and bacon is crisp.
  8. Let rest 5 minutes, then slice and garnish with fresh parsley.

Notes

  • Use toothpicks to secure the bacon if needed during cooking.
  • Low-fat cream cheese can be used for a lighter version.
  • Serve with a side of roasted vegetables or a fresh salad.
