  • 6 minced garlic cloves

  • 2 teaspoons ground coriander
  • 2 teaspoons paprika
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper (optional for more heat)
  • Salt to preferred taste (around 1/2 teaspoon)
  • 1/4 cup tomato paste
  • 2 cups tomato sauce (adjust as desired)
  • 1 cup water
  • 1 cup thick cream

Instructions

  1. Step 1: Sauté the Vegetables
    Heat oil in a large pan over medium heat. Add the chopped onion and peppers to the pan. Cook them for about 5 minutes or until they are softened, stirring occasionally to ensure even cooking without burning.
  2. Step 2: Add and Bloom the Spices
    To the softened vegetables, add minced ginger, minced garlic, cumin, turmeric, coriander, paprika, cayenne, and garam masala. Stir continuously and cook the spices for about 30 seconds. This step helps to release and enhance the flavors of the spices by blooming them.
  3. Step 3: Incorporate the Tomato Base
    Stir in the tomato paste, tomato sauce, and water into the pan. Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for about 10 minutes. Feel free to simmer longer if you want to develop a more robust flavor, and add a bit of water if you find the sauce thickening too much during this process.
  4. Step 4: Add the Cream and Finish the Sauce
    Finally, pour the heavy cream into the sauce and stir well to incorporate it fully.
