Description

Marinated Mozzarella with Pomegranate and Herbs is a festive and colorful appetizer featuring creamy mozzarella balls soaked in a vibrant herb dressing, topped with juicy pomegranate seeds and crunchy pistachios. Perfect for holiday tables, parties, or refreshing grazing platters!

Ingredients

  • 12 mini mozzarella balls (bocconcini)

  • 1/2 cup pomegranate seeds

  • 2 tablespoons chopped fresh mint

  • 2 tablespoons chopped fresh parsley

  • 2 tablespoons chopped pistachios

  • 1/3 cup extra virgin olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon lemon zest

  • 1/2 teaspoon crushed red pepper flakes

  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together olive oil, balsamic vinegar, lemon zest, red pepper flakes, salt, and pepper.

  • Place the mozzarella balls in a shallow serving dish.

  • Pour the marinade over the mozzarella, ensuring they are well coated.

  • Sprinkle with chopped mint, parsley, and pistachios.

  • Top generously with fresh pomegranate seeds.

  • Let marinate for at least 30 minutes before serving to allow flavors to develop.

  • Serve with crusty bread or as part of a festive appetizer platter.

Notes

  • Use fresh, high-quality mozzarella for the best flavor and texture.

  • For a richer taste, substitute part of the olive oil with a little truffle oil.

  • Can be prepared a few hours in advance and stored covered in the refrigerator.

  • Adjust red pepper flakes to taste if you prefer a spicier or milder marinade.
