- 2 large zucchinis
- 1 cup ricotta cheese
- 1/4 cup grated parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup marinara sauce
- Fresh basil leaves, for garnish
- Crushed red pepper flakes (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips using a mandolin or a sharp knife.
- In a bowl, mix the ricotta cheese, grated parmesan, garlic powder, salt, and black pepper until well combined.
- Lay the zucchini strips flat and spoon a small amount of the ricotta mixture onto one end of each strip.
- Roll up each zucchini slice around the ricotta mixture and secure with a toothpick if needed.
- Spread marinara sauce on the bottom of a baking dish, then place the zucchini roll-ups seam-side down on top of the sauce.
- Top the roll-ups with additional marinara sauce and sprinkle with a little extra parmesan.
- Cover the baking dish with foil and bake for 20 minutes, then remove the foil and bake for an additional 5-10 minutes until bubbly.
- Garnish with fresh basil leaves and crushed red pepper flakes before serving.
Notes
- For a spicier kick, sprinkle more crushed red pepper flakes on top.
- To make this dish even lighter, use part-skim ricotta cheese.
- If you prefer a vegan version, substitute the ricotta and parmesan with plant-based cheese alternatives.
