Description

Fresh zucchini rolled with creamy ricotta cheese, topped with marinara sauce and a sprinkle of parmesan, perfect for a light and healthy appetizer or meal.


Ingredients

  • 2 large zucchinis
  • 1 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • Fresh basil leaves, for garnish
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips using a mandolin or a sharp knife.
  3. In a bowl, mix the ricotta cheese, grated parmesan, garlic powder, salt, and black pepper until well combined.
  4. Lay the zucchini strips flat and spoon a small amount of the ricotta mixture onto one end of each strip.
  5. Roll up each zucchini slice around the ricotta mixture and secure with a toothpick if needed.
  6. Spread marinara sauce on the bottom of a baking dish, then place the zucchini roll-ups seam-side down on top of the sauce.
  7. Top the roll-ups with additional marinara sauce and sprinkle with a little extra parmesan.
  8. Cover the baking dish with foil and bake for 20 minutes, then remove the foil and bake for an additional 5-10 minutes until bubbly.
  9. Garnish with fresh basil leaves and crushed red pepper flakes before serving.

Notes

  • For a spicier kick, sprinkle more crushed red pepper flakes on top.
  • To make this dish even lighter, use part-skim ricotta cheese.
  • If you prefer a vegan version, substitute the ricotta and parmesan with plant-based cheese alternatives.
