Description

Rustic, wood-fired flatbread folded over ripe tomato, fresh mozzarella, and basil, seasoned with sea salt and olive oil for a smoky, artisanal twist on the classic Caprese sandwich.


Ingredients

  • 1 portion homemade or store-bought pizza dough (approx. 250g)
  • 1 tablespoon olive oil
  • 1/2 teaspoon coarse sea salt
  • 1/2 teaspoon dried rosemary or Italian herbs
  • 23 slices fresh mozzarella
  • 23 thick slices ripe tomato
  • 34 fresh basil leaves
  • Freshly ground black pepper
  • Drizzle of extra virgin olive oil
  • Optional: thin slices of prosciutto

Instructions

  1. Preheat a pizza oven, grill, or cast iron skillet until very hot (ideally 500°F/260°C or higher).
  2. Roll or stretch the dough into a rustic oval or oblong shape.
  3. Brush the top with olive oil and sprinkle with sea salt and dried herbs.
  4. Cook the dough directly on the hot surface for 2–3 minutes per side, or until puffed, blistered, and golden with charred spots. Set aside to cool slightly.
  5. On one half of the flatbread, layer mozzarella, tomato slices, and basil. Add prosciutto if using.
  6. Season with a pinch of salt and pepper and a drizzle of olive oil.
  7. Fold the flatbread over the filling and press gently. Serve warm or at room temperature.

Notes

  • Use fresh, high-quality ingredients for the best flavor.
  • Flatbread can be made ahead and warmed before assembling.
  • Optional prosciutto adds a savory depth but can be omitted for a vegetarian version.
