Description
Rustic, wood-fired flatbread folded over ripe tomato, fresh mozzarella, and basil, seasoned with sea salt and olive oil for a smoky, artisanal twist on the classic Caprese sandwich.

- 1 portion homemade or store-bought pizza dough (approx. 250g)
- 1 tablespoon olive oil
- 1/2 teaspoon coarse sea salt
- 1/2 teaspoon dried rosemary or Italian herbs
- 2–3 slices fresh mozzarella
- 2–3 thick slices ripe tomato
- 3–4 fresh basil leaves
- Freshly ground black pepper
- Drizzle of extra virgin olive oil
- Optional: thin slices of prosciutto
Instructions
- Preheat a pizza oven, grill, or cast iron skillet until very hot (ideally 500°F/260°C or higher).
- Roll or stretch the dough into a rustic oval or oblong shape.
- Brush the top with olive oil and sprinkle with sea salt and dried herbs.
- Cook the dough directly on the hot surface for 2–3 minutes per side, or until puffed, blistered, and golden with charred spots. Set aside to cool slightly.
- On one half of the flatbread, layer mozzarella, tomato slices, and basil. Add prosciutto if using.
- Season with a pinch of salt and pepper and a drizzle of olive oil.
- Fold the flatbread over the filling and press gently. Serve warm or at room temperature.

- Use fresh, high-quality ingredients for the best flavor.
- Flatbread can be made ahead and warmed before assembling.
- Optional prosciutto adds a savory depth but can be omitted for a vegetarian version.
