Description

A delightful appetizer featuring creamy whipped goat cheese paired with fresh blueberries tossed in lemon and thyme, served on crispy toasted French bread crostini with a tangy balsamic reduction drizzle. Perfect for parties or elegant gatherings, combining fresh, vibrant flavors with a creamy texture.

Ingredients

Scale

Goat Cheese Mixture

  • 8 ounces goat cheese
  • 1/2 cup heavy whipping cream
  • 1 teaspoon salt

Blueberries

  • 10 ounces blueberries
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh thyme
  • Balsamic reduction (quantity as desired for drizzling)

Crostini

  • 12 slices 1/2-inch thick French bread
  • 4 tablespoons butter, melted
  • 1 garlic clove

Instructions

  1. Prepare Whipped Goat Cheese: In a bowl, combine goat cheese, heavy whipping cream, and salt. Use a hand mixer to beat until the mixture is smooth and well combined. Set aside.
  2. Prepare Blueberries: In a small bowl, toss blueberries with lemon zest, lemon juice, and chopped fresh thyme until evenly coated. Set aside to marinate slightly.
  3. Toast Crostini: Heat a heavy skillet over medium-high heat. Brush both sides of each French bread slice with melted butter. Toast the bread in the skillet for 2 to 3 minutes per side or until golden brown. After toasting, gently rub one side of each crostini with the garlic clove to impart a subtle garlic flavor.
  4. Assemble Crostini: Spread a generous layer of the whipped goat cheese mixture onto each toasted crostini. Top with the lemon-thyme blueberries. Drizzle with balsamic reduction to taste and garnish with additional fresh thyme if desired.

Notes

  • You can prepare the whipped goat cheese and blueberry mixture a few hours ahead and refrigerate until ready to assemble.
  • Use day-old French bread for best toasting results and crunchiness.
  • For a stronger garlic flavor, rub the garlic clove on both sides of the crostini or mince and mix with the butter before brushing.
  • Balsamic reduction can be purchased or homemade by simmering balsamic vinegar until thickened.
  • Serve immediately after assembling to keep crostini crisp.
