Description

Savory tartlet shells filled with creamy whipped feta, topped with marinated green olives, lemon zest, and fresh parsley – a Mediterranean-inspired appetizer perfect for entertaining.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup almond flour
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 23 tablespoons ice water
  • 1/2 cup crumbled feta cheese
  • 1/2 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1/2 teaspoon lemon zest
  • 1 cup green olives, pitted
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon dried oregano
  • Fresh parsley leaves and lemon zest strips for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix all-purpose flour, almond flour, and salt. Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing just until the dough comes together.
  4. Press dough evenly into mini muffin tins to form tartlet shells. Prick bottoms with a fork.
  5. Bake tartlets for 12-15 minutes or until lightly golden. Let cool completely.
  6. In a blender or food processor, combine feta cheese, Greek yogurt, olive oil, and lemon zest until smooth and creamy.
  7. Spoon whipped feta into cooled tartlet shells.
  8. In a bowl, mix green olives with parsley, lemon juice, and oregano.
  9. Top each tartlet with marinated olives and garnish with fresh parsley and lemon zest.
  10. Serve chilled or at room temperature.
