- 1/2 teaspoon lemon zest
- 1 cup green olives, pitted

- 1 teaspoon lemon juice
- 1/2 teaspoon dried oregano

Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix all-purpose flour, almond flour, and salt. Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing just until the dough comes together.
- Press dough evenly into mini muffin tins to form tartlet shells. Prick bottoms with a fork.
- Bake tartlets for 12-15 minutes or until lightly golden. Let cool completely.
- In a blender or food processor, combine feta cheese, Greek yogurt, olive oil, and lemon zest until smooth and creamy.
- Spoon whipped feta into cooled tartlet shells.
- In a bowl, mix green olives with parsley, lemon juice, and oregano.
- Top each tartlet with marinated olives and garnish with fresh parsley and lemon zest.
- Serve chilled or at room temperature.
