Description

These veggie spinach wraps with hummus are fresh, colorful, and packed with plant-based goodness. Made with creamy hummus, crunchy veggies, and nutritious spinach tortillas, they’re perfect for a quick lunch or light dinner.


Ingredients

  • 4 large spinach tortillas (wraps)

  • 1 cup hummus (homemade or store-bought)

  • Morton sea salt flakes (or salt to taste)

  • 1 tsp Everything bagel seasoning (optional)

  • 4 cups baby spinach

  • 1 avocado, sliced

  • 2 slices red onion, separated into rings

  • 2 cups shredded carrots

  • 1 cup alfalfa sprouts or microgreens


Instructions

  1. Lay out the tortillas on a clean work surface. Spread a generous layer of hummus on each, dividing evenly. Sprinkle with salt and Everything bagel seasoning if desired.

  2. Pile baby spinach, avocado slices, red onion rings, shredded carrots, and sprouts on one side of each wrap, leaving a strip of hummus uncovered on the other side.

  3. Roll tightly from the veggie-filled side to the hummus edge to seal. Place seam-side down.

  4. Slice each wrap in half. Serve immediately, or wrap tightly and refrigerate for up to 6 hours.


Notes

  • Great for meal prep — just keep wrapped in parchment or foil.

  • Customize with cucumbers, bell peppers, or roasted red peppers for extra crunch.

  • Use gluten-free wraps if needed.
