- 2 cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1 3/4 cups whole milk
- 1/2 cup melted butter
- 1 tbsp vanilla extract
- 1 cup fresh or frozen raspberries
- 2 tbsp sugar (for coulis)
- 1 tsp lemon juice
- 1/2 cup white chocolate, melted
- 1/2 cup heavy whipping cream, whipped
- Fresh raspberries and strawberries
- Fresh mint leaves
Instructions
- Preheat waffle iron according to manufacturer’s instructions.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, beat eggs, then add milk, melted butter, and vanilla extract. Mix well.
- Combine the wet ingredients with the dry ingredients and stir until just combined; do not overmix.
- Pour batter into the preheated waffle iron and cook until golden brown and cooked through. Set aside.
- To make the raspberry coulis, combine raspberries, sugar, and lemon juice in a small saucepan.
- Simmer over medium heat for 5–7 minutes, stirring frequently, until the raspberries break down.
- Strain through a fine mesh sieve to remove seeds and create a smooth sauce. Let cool.
- Assemble the dish by stacking waffles on serving plates.
- Drizzle with raspberry coulis and melted white chocolate.
- Top with whipped cream, fresh berries, and mint leaves. Serve immediately.

- Use fresh raspberries for a brighter, fresher coulis flavor.
- Waffles can be kept warm in a low oven while preparing other components.
- Adjust sweetness of coulis to taste by adding more or less sugar.
- Whipped cream can be sweetened lightly with powdered sugar for added flavor.
