Description

Golden vanilla waffles served with a tangy raspberry coulis, a drizzle of melted white chocolate, and topped with whipped cream, fresh berries, and mint leaves. Ideal for a decadent breakfast or brunch.


Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 3/4 cups whole milk
  • 1/2 cup melted butter
  • 1 tbsp vanilla extract
  • 1 cup fresh or frozen raspberries
  • 2 tbsp sugar (for coulis)
  • 1 tsp lemon juice
  • 1/2 cup white chocolate, melted
  • 1/2 cup heavy whipping cream, whipped
  • Fresh raspberries and strawberries
  • Fresh mint leaves

Instructions

  1. Preheat waffle iron according to manufacturer’s instructions.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat eggs, then add milk, melted butter, and vanilla extract. Mix well.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined; do not overmix.
  5. Pour batter into the preheated waffle iron and cook until golden brown and cooked through. Set aside.
  6. To make the raspberry coulis, combine raspberries, sugar, and lemon juice in a small saucepan.
  7. Simmer over medium heat for 5–7 minutes, stirring frequently, until the raspberries break down.
  8. Strain through a fine mesh sieve to remove seeds and create a smooth sauce. Let cool.
  9. Assemble the dish by stacking waffles on serving plates.
  10. Drizzle with raspberry coulis and melted white chocolate.
  11. Top with whipped cream, fresh berries, and mint leaves. Serve immediately.

Notes

  • Use fresh raspberries for a brighter, fresher coulis flavor.
  • Waffles can be kept warm in a low oven while preparing other components.
  • Adjust sweetness of coulis to taste by adding more or less sugar.
  • Whipped cream can be sweetened lightly with powdered sugar for added flavor.
