- 1 tsp sugar
- 1/2 tsp salt, plus more to taste
- 1/2 tsp black pepper

- 0.5 tbsp oil
- 3 tbsp flour, any type
- 2 cups (500ml) low sodium chicken stock/broth
Instructions
- Cook The Sausages: Heat oil in a large skillet over medium-high heat. Add the sausages and cook, turning occasionally, to brown on all sides. Once browned, remove the sausages from the skillet. Optionally, slice the sausages diagonally into pieces to make serving easier.
- Cook The Aromatics: In the same skillet, add the minced garlic and sliced onion. Cook for about 2 minutes until the onion becomes translucent and fragrant, stirring occasionally to prevent burning.
- Add Curry Powder And Flour: Sprinkle in the curry powder and stir for approximately 30 seconds to release its flavors into the onions and garlic. Then, add the flour and stir continuously for another 30 seconds to create a roux, which will thicken the sauce.
- Make The Sauce: Gradually pour in the chicken stock while stirring constantly to avoid lumps, creating a smooth sauce base. Add the sliced carrots, sugar, salt, and black pepper. Stir thoroughly to combine all ingredients evenly.
- Simmer With Sausages And Peas: Return the browned sausages to the skillet along with the frozen peas. Bring the mixture to a gentle simmer and cook for about 3 minutes, or until the sauce has thickened and the sausages are fully cooked through.
