- 2 cups all-purpose flour
- 1 tbsp sugar
- 1 tsp salt
- 1 tbsp dry yeast
- 3/4 cup warm water
- 2 tbsp olive oil
- Oil for frying
- 1 can tuna in olive oil, drained
- 2 medium potatoes, boiled and cubed
- 2 hard-boiled eggs, sliced
- 1/2 cup green olives, sliced
- 1/2 cup roasted red peppers, chopped
- 2 tbsp capers (optional)
- 2 tbsp chopped parsley
- 1 tbsp harissa (adjust to spice level)
- Salt and pepper to taste
- Lemon wedges (for serving)
Instructions
- In a bowl, mix flour, sugar, and salt. In a separate cup, dissolve yeast in warm water and let it sit until foamy (5–10 minutes).
- Combine wet and dry ingredients, knead until smooth, then cover and let rise for 1 hour or until doubled in size.
- Divide the dough into small oval shapes and let rise for another 20 minutes.
- Heat oil in a deep pan and fry each piece until golden brown. Drain on paper towels and let cool slightly.
- Slice each bun open lengthwise without cutting all the way through.
- In a bowl, mix tuna, potatoes, eggs, olives, roasted red peppers, parsley, and capers. Season with salt, pepper, and lemon juice.
- Spread harissa inside each bun and generously fill with the tuna mixture.
- Serve immediately with lemon wedges on the side.
