- 1/2 cup unsweetened cocoa powder
- 1/2 cup coconut oil or butter, melted
- 1 cup coconut sugar or regular sugar
- 1/4 cup milk of choice
- 2 tsp vanilla extract
- 1/2 cup flour (all-purpose or gluten-free blend)
- 1/4 tsp salt
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup strong brewed espresso or coffee, cooled
- Unsweetened cocoa powder, for dusting
Instructions
- Preheat oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
- In a mixing bowl, whisk together cocoa powder, melted coconut oil (or butter), and sugar until smooth.
- Stir in milk, vanilla, flour, and salt. Mix until just combined.
- Pour the brownie batter into the prepared pan and spread evenly. Bake for 20-25 minutes or until set. Let cool completely.
- While the brownie base cools, prepare the tiramisu layer. Beat mascarpone, heavy cream, powdered sugar, and vanilla until smooth and fluffy.
- Once the brownie is cool, brush or drizzle espresso evenly over the top.
- Spread the mascarpone mixture over the brownie base. Smooth the top with a spatula.
- Chill in the fridge for at least 4 hours or overnight to set.
- Dust generously with cocoa powder before slicing into bars.
Notes
- Make sure the brownie layer is completely cool before adding the mascarpone layer to prevent melting.
- For a stronger coffee flavor, use espresso instead of regular coffee.
- Chilling overnight gives the best texture and flavor.
