Ingredients

  • 2 slices of your favorite bread (whole wheat, keto, sourdough, etc.)

  • 1 tablespoon butter, divided

  • 2 large eggs

  • 2 tablespoons feta cheese, crumbled

  • Fresh herbs (dill, parsley, scallions, cilantro, or basil), for garnish

  • Salt and pepper to taste (optional, depending on saltiness of feta)

  • Red pepper flakes (optional)


Instructions

  • Spread softened butter on both sides of the bread slices. Fry in a skillet over medium heat for 2 minutes per side until golden brown, or toast using a toaster.

  • Remove the toast, then add ½ tablespoon of butter to the skillet. Crack in the eggs, add feta cheese, and cook on medium-low, stirring often, for 3–4 minutes until scrambled and fully cooked.

  • Divide the scrambled eggs between the toasted bread slices.
