1 tablespoon butter, divided

2 large eggs

2 tablespoons feta cheese, crumbled

Instructions

Spread softened butter on both sides of the bread slices. Fry in a skillet over medium heat for 2 minutes per side until golden brown, or toast using a toaster.

Remove the toast, then add ½ tablespoon of butter to the skillet. Crack in the eggs, add feta cheese, and cook on medium-low, stirring often, for 3–4 minutes until scrambled and fully cooked.
