Description

Taco Ranch Bites are the ultimate easy appetizer—crispy phyllo shells filled with taco-seasoned beef, creamy ranch, melty cheddar, and zesty tomatoes and green chilies. They’re freezer-friendly, wildly addictive, and perfect for parties, game nights, or last-minute guests.


Ingredients

  • 1 lb lean ground beef

  • 1 packet taco seasoning (or homemade blend)

  • 1 can (10 oz) diced tomatoes with green chilies, drained

  • 1 cup shredded cheddar cheese

  • 1/2 cup ranch dressing

  • 30 phyllo tart shells (store-bought or homemade)


Instructions

  • Preheat Oven:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Cook the Beef:
    In a skillet over medium heat, cook ground beef until browned. Drain excess fat.

  • Add Flavor:
    Stir in taco seasoning and drained tomatoes with green chilies. Let it simmer for 5 minutes. Remove from heat and let it cool slightly.

  • Make the Filling:
    In a large bowl, combine the cooled taco meat with cheddar cheese and ranch dressing. Stir until fully combined.

  • Fill the Shells:
    Place phyllo shells on your prepared baking sheet. Spoon the taco mixture into each shell—be generous but don’t overfill.

  • Bake:
    Bake for 8–10 minutes, or until cheese is melted and shells are golden. If baking from frozen, increase time to 12–13 minutes.

  • Serve or Store:
    Serve warm, or store in the fridge for up to 4 days. You can also freeze them unbaked—just bake directly from frozen with a few extra minutes.


Notes

  • Swap beef for ground turkey or black beans for a lighter or vegetarian version.

  • Use mini pie crusts if phyllo shells aren’t available.

  • Pepper jack cheese or a spicy ranch adds a fun kick.
