Description

Tender cabbage leaves wrapped around a hearty filling of seasoned ground beef, rice, and vegetables, simmered in a savory tomato sauce—comforting, wholesome, and perfect for meal prep.


Ingredients

  • 1 large head of green cabbage
  • 1 lb ground beef
  • 1/2 cup cooked rice
  • 1/2 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 medium carrot, finely diced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 1 tablespoon tomato paste
  • 1/2 cup tomato sauce
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of water to a boil. Carefully peel 8 large cabbage leaves and blanch them in boiling water for 2–3 minutes until pliable. Drain and pat dry.
  2. In a skillet, heat olive oil and sauté onions, garlic, and carrots until softened. Add ground beef and cook until browned.
  3. Stir in cooked rice, tomato paste, paprika, oregano, salt, and pepper. Mix until well combined.
  4. Lay out a cabbage leaf, place a scoop of filling in the center, fold in sides, and roll tightly. Repeat with remaining leaves and filling.
  5. Place the rolls seam-side down in a baking dish. Pour tomato sauce over the top.
  6. Cover with foil and bake at 375°F (190°C) for 30 minutes.
  7. Garnish with fresh parsley and serve hot.

Notes

  • You can substitute ground beef with ground turkey or plant-based meat for a lighter or vegetarian version.
  • Use leftover rice to speed up prep time.
  • These rolls freeze well—just reheat in the oven or microwave before serving.
