- 1 large head of green cabbage
- 1 lb ground beef
- 1/2 cup cooked rice
- 1/2 onion, finely chopped
- 2 garlic cloves, minced
- 1 medium carrot, finely diced
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper, to taste
- 1 tablespoon tomato paste
- 1/2 cup tomato sauce
- 1 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of water to a boil. Carefully peel 8 large cabbage leaves and blanch them in boiling water for 2–3 minutes until pliable. Drain and pat dry.
- In a skillet, heat olive oil and sauté onions, garlic, and carrots until softened. Add ground beef and cook until browned.
- Stir in cooked rice, tomato paste, paprika, oregano, salt, and pepper. Mix until well combined.
- Lay out a cabbage leaf, place a scoop of filling in the center, fold in sides, and roll tightly. Repeat with remaining leaves and filling.
- Place the rolls seam-side down in a baking dish. Pour tomato sauce over the top.
- Cover with foil and bake at 375°F (190°C) for 30 minutes.
- Garnish with fresh parsley and serve hot.
Notes
- You can substitute ground beef with ground turkey or plant-based meat for a lighter or vegetarian version.
- Use leftover rice to speed up prep time.
- These rolls freeze well—just reheat in the oven or microwave before serving.
