Description

Soft, vibrant red brioche buns topped with fresh strawberries, a shiny strawberry glaze, and piped pistachio cream. These elegant bakery-style treats are perfect for spring gatherings and special occasions.


Ingredients

  • For the Brioche Dough:
  • 3 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon active dry yeast
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1/2 cup whole milk, lukewarm
  • 3/4 cup unsalted butter, softened
  • Red gel food coloring (optional)
  • For the Strawberry Glaze & Topping:
  • 1 cup fresh strawberries, sliced
  • 1/2 cup strawberry jam
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • For the Pistachio Cream:
  • 1/2 cup shelled pistachios
  • 1/4 cup powdered sugar
  • 2 tablespoons butter, softened
  • 23 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. In a stand mixer bowl, combine warm milk, yeast, and sugar. Let sit for 5–10 minutes until frothy.
  2. Add eggs, flour, salt, and red food coloring if using. Mix until a dough forms.
  3. Add butter in small chunks while mixing, and knead for 8–10 minutes until the dough is soft and elastic.
  4. Cover and let rise in a warm place for 1.5 hours, or until doubled in size.
  5. Punch down and divide dough into 10 equal pieces. Shape into smooth buns and place on a lined baking tray.
  6. Cover and let rise again for 30–40 minutes. Preheat oven to 350°F (175°C).
  7. Bake for 18–20 minutes, or until golden and cooked through. Let cool completely.
  8. To make the glaze, heat strawberry jam with lemon juice and water until smooth. Brush over buns. Top with sliced strawberries.
  9. Blend pistachios, powdered sugar, butter, milk, and vanilla until smooth and creamy. Pipe small dots onto the buns between strawberry slices.
  10. Serve fresh or store in the fridge for up to 2 days.

Notes

  • Use high-quality pistachios for the smoothest, richest cream.
  • The buns can be tinted red for a more vibrant presentation, but it’s optional.
  • Best served the same day for peak freshness and texture.
