- For the Brioche Dough:
- 3 1/2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tablespoon active dry yeast
- 1/2 teaspoon salt
- 4 large eggs
- 1/2 cup whole milk, lukewarm
- 3/4 cup unsalted butter, softened
- Red gel food coloring (optional)
- For the Strawberry Glaze & Topping:
- 1 cup fresh strawberries, sliced
- 1/2 cup strawberry jam
- 1 tablespoon lemon juice
- 1 tablespoon water
- For the Pistachio Cream:
- 1/2 cup shelled pistachios
- 1/4 cup powdered sugar
- 2 tablespoons butter, softened
- 2–3 tablespoons milk
- 1/4 teaspoon vanilla extract
Instructions
- In a stand mixer bowl, combine warm milk, yeast, and sugar. Let sit for 5–10 minutes until frothy.
- Add eggs, flour, salt, and red food coloring if using. Mix until a dough forms.
- Add butter in small chunks while mixing, and knead for 8–10 minutes until the dough is soft and elastic.
- Cover and let rise in a warm place for 1.5 hours, or until doubled in size.
- Punch down and divide dough into 10 equal pieces. Shape into smooth buns and place on a lined baking tray.
- Cover and let rise again for 30–40 minutes. Preheat oven to 350°F (175°C).
- Bake for 18–20 minutes, or until golden and cooked through. Let cool completely.
- To make the glaze, heat strawberry jam with lemon juice and water until smooth. Brush over buns. Top with sliced strawberries.
- Blend pistachios, powdered sugar, butter, milk, and vanilla until smooth and creamy. Pipe small dots onto the buns between strawberry slices.
- Serve fresh or store in the fridge for up to 2 days.

- Use high-quality pistachios for the smoothest, richest cream.
- The buns can be tinted red for a more vibrant presentation, but it’s optional.
- Best served the same day for peak freshness and texture.
