Description

Delight in these luscious Strawberry Brownies featuring a moist strawberry cake base topped with a sweet, creamy strawberry frosting—perfect for any dessert craving.


Ingredients

Brownie Base

  • 1 box strawberry cake mix with pudding in the mix (We used Pillsbury – but see post for more tips!)
  • 2 large eggs
  • 1/3 cup vegetable or canola oil (80 ml)
  • 1 teaspoon vanilla extract (5 ml)

Strawberry Brownie Frosting

  • 3/4 cup powdered sugar (90g)
  • 2 tablespoon strawberry preserves (40g – Bonne Maman strawberry preserves is the best!)
  • 1 1/2 tablespoons milk (22ml)
  • 1 tablespoon cream cheese (15g – optional (see post for tips!))

Instructions

  1. Preheat and Prepare: Preheat oven to 350 degrees F. Spray an 8×8 pan with nonstick spray or line with foil. Set aside. (I used a glass baking dish and lined with parchment paper.)
  2. Mix & Bake: In a large bowl, mix strawberry cake mix, eggs, oil and vanilla extract. (I’ve used a spoon and mixer, and the results turn out the same.) Press into the prepared pan. Bake for 18-22 minutes, until just done. Let cool completely
  3. Strawberry Brownie Frosting:
  4. Mix Frosting and Spread: In a small bowl, whisk together powdered sugar, strawberry jam, cream cheese (is using) and milk. Spread over the cooled strawberry brownies.

Notes

  • Use parchment paper for easier removal of brownies.
  • Bonne Maman strawberry preserves is recommended for best flavor.
  • Cream cheese in frosting is optional and adds a creamy texture.
