Spinach Mixture
- 8 cups fresh spinach
- 1/2 cup light cream cheese
- 2 tbsp sundried tomatoes, chopped fine
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper to taste
Egg Whites
- 1 1/2 cups egg whites
Wrap
- 4 whole wheat tortillas (or any preferred tortillas)
- 1 cup light feta cheese
Instructions
- Wilt the Spinach: In a medium non-stick frying pan over medium heat, cook the fresh spinach until it has wilted down, which should take just a few minutes.
- Remove Moisture: Allow the cooked spinach to cool slightly, then use a paper towel to squeeze out any excess moisture to prevent the wrap from becoming soggy.
- Prepare Spinach Mixture: In a small bowl, combine the drained spinach with light cream cheese, finely chopped sundried tomatoes, Italian seasoning, garlic powder, salt, and pepper. Mix thoroughly to blend all flavors evenly.
- Cook Egg Whites: Spray the same frying pan with cooking spray, add the egg whites, and cover the pan. Let the egg whites steam for about 2 to 3 minutes until fully cooked and set.
- Assemble the Wraps: While the egg whites are cooking, spread the spinach and cream cheese mixture over the center third of each tortilla. Place the cooked egg whites on top of the mixture, then sprinkle with light feta cheese.
- Fold and Cook Wraps: Fold the tortillas like burritos. You can either air fry them at 400°F for 6 minutes, flipping halfway through to get a crispy exterior, or heat them in the same frying pan until both sides are crispy. Serve warm and enjoy!
Notes
- Use paper towels to remove as much moisture as possible from the spinach to avoid soggy wraps.
- If you prefer, substitute whole wheat tortillas with gluten-free or low-carb tortillas to customize your diet.
- The air fryer method crisps the wrap nicely without needing extra oil.
- Store any leftovers wrapped tightly in foil or plastic wrap and refrigerate for up to 2 days.
- Reheat in the air fryer or a skillet for best texture.
