Ingredients

  • 2 flatbreads or naan breads

  • 1 cup fresh spinach

  • 1/2 cup crumbled feta cheese

  • 1/2 cup shredded mozzarella cheese

  • 2 tablespoons sun-dried tomatoes (chopped)

  • 2 tablespoons basil pesto

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat and sauté the spinach until wilted; season lightly with salt and pepper.

  2. Lay out the flatbreads and spread a thin layer of basil pesto on one side of each.

  3. Top half of each flatbread with sautéed spinach, crumbled feta, shredded mozzarella, and chopped sun-dried tomatoes.

  4. Fold the flatbreads over to create a sandwich.

  5. Preheat a grill pan or skillet over medium-high heat.

  6. Grill the flatbread sandwiches for 2–3 minutes on each side until golden and the cheese is melted.

  7. Slice and serve warm for the ultimate melty experience.

Notes

  • Use whole-wheat flatbread or gluten-free naan for dietary preferences.

  • Press the sandwich lightly with a spatula while grilling for better melting and crisping.
