- 1 1/2 lbs chicken thighs or breast, cut into chunks
- 2 tablespoons olive oil
- 2 tablespoons plain yogurt
- 1 tablespoon lemon juice
- 1 tablespoon tomato paste
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- Salt and black pepper, to taste
- Wooden or metal skewers, soaked if wooden
- 1 cup cherry tomatoes
- 4–5 green chilies or shishito peppers
- Olive oil, for brushing
- Fresh parsley, chopped
- Flatbreads or rice (optional)
Instructions
- In a large bowl, mix yogurt, olive oil, lemon juice, tomato paste, and spices.
- Add chicken chunks and marinate for at least 1 hour or overnight for best flavor.
- Thread chicken pieces onto skewers, alternating with cherry tomatoes and green chilies if desired.
- Preheat grill or grill pan to medium-high heat. Lightly brush skewers with olive oil.
- Grill for 4–5 minutes per side, or until chicken is charred and cooked through.
- Sprinkle with chopped parsley and serve hot with flatbread or rice.
Notes
- For even cooking, cut chicken into uniform chunks.
- Soaking wooden skewers prevents them from burning on the grill.
- You can use bell peppers instead of chilies for a milder version.
