Description

Juicy marinated chicken skewers grilled with cherry tomatoes and green chilies, bursting with smoky and spicy flavor. Served with fresh herbs and optional flatbread or rice for a hearty meal.


Ingredients

  • 1 1/2 lbs chicken thighs or breast, cut into chunks
  • 2 tablespoons olive oil
  • 2 tablespoons plain yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon tomato paste
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt and black pepper, to taste
  • Wooden or metal skewers, soaked if wooden
  • 1 cup cherry tomatoes
  • 45 green chilies or shishito peppers
  • Olive oil, for brushing
  • Fresh parsley, chopped
  • Flatbreads or rice (optional)

Instructions

  1. In a large bowl, mix yogurt, olive oil, lemon juice, tomato paste, and spices.
  2. Add chicken chunks and marinate for at least 1 hour or overnight for best flavor.
  3. Thread chicken pieces onto skewers, alternating with cherry tomatoes and green chilies if desired.
  4. Preheat grill or grill pan to medium-high heat. Lightly brush skewers with olive oil.
  5. Grill for 4–5 minutes per side, or until chicken is charred and cooked through.
  6. Sprinkle with chopped parsley and serve hot with flatbread or rice.

Notes

  • For even cooking, cut chicken into uniform chunks.
  • Soaking wooden skewers prevents them from burning on the grill.
  • You can use bell peppers instead of chilies for a milder version.
