- 2 1/4 teaspoons active dry yeast
- 1 cup warm water (110°F)
- 1 tablespoon brown sugar
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon baking soda
- 4 cups water (for boiling)
- 6 slices mozzarella or provolone cheese, cut into strips
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sea salt
- 1 tablespoon fresh thyme or rosemary, chopped
- 1 tablespoon melted butter (optional, for brushing)
Instructions
- In a large bowl, combine yeast, warm water, and brown sugar. Let sit for 5 minutes until foamy.
- Stir in flour and salt until a soft dough forms. Knead for about 5–7 minutes until smooth. Cover and let rise for 45 minutes or until doubled.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Divide dough into 6 equal pieces. Roll each into a long rope, flatten slightly, and press cheese strips along the center. Pinch to seal and twist into a ring.
- In a large pot, bring 4 cups water and baking soda to a boil. Boil each ring for 30 seconds, then remove with a slotted spoon and place on the prepared sheet.
- Brush with egg wash, sprinkle with coarse salt and herbs.
- Bake for 12–15 minutes, or until golden and puffed.
- Brush with melted butter if desired. Serve warm with dipping sauce or mustard.
